A delicious and hearty salad dressing can make eating salad and greens daily not just tolerable but actually enticing, something that you crave. One of my new favorites is an Esalen-inspired fresh basil dressing that my mom made. She revised the original recipe to make it even healthier. It is thick but not too thick and has a creamy texture without the cream. Packed with the antioxidant power of basil, which is used in traditional Ayurvedic medicine, it is easy to make and super alkalizing to boot!t
In addition to salads, you can use this dressing to top an omelet, roasted or grilled salmon, chicken and I even enjoy it with plain rice. It can green-ify almost anything! For weight loss/management and optimal health, it is always better to prepare your own meals with fresh ingredients and having a jar of this dressing in your refrigerator makes it easy, fast and tasty. Here's the recipe:
Fresh Basil Citrus Dressing
Add the following ingredients to a blender, "bullet" or food processor:
1 large package of basil (2 or more cups)
1 minced garlic clove
2-4 TBSP apple cider vinegar (2 for thicker dressing or 4 for thinner)
Juice of 1 lemon
Juice of 1/2 orange
1/2 cup extra virgin olive oil
Blend until smooth, add salt and pepper to taste (we suggest Celtic or Himalayan Pink Salt) then transfer to a re-usable jar and keep refrigerated.
